Tomato & Basil Soup

This Slimming World recipe is a firm favorite in our household. It’s cheap, quick and easy to make, it’s tasty and most importantly Molly loves it.

Here’s what you need…

1 large onion

2 garlic cloves, crushed

1.1 liters of vegetable stock

900g tomatoes, chopped and de-seeded (psst, I use tinned chopped tomatoes – you’re welcome!)

Bouquet garni

Chopped fresh basil

Fat free natural yogurt to garnish

Fresh basil to garnish

Salt & Pepper to season

Here’s what to do…

Put the chopped onion, garlic and 250ml of the stock into a large pan, cover and bring to the boil

Continue to boil for 5-10 minutes then uncover the pan, reduce the heat and simmer for 20-30 minutes until the onion is golden and syrupy.

Add the tomatoes to the pan and cook gently for 3-4 minutes then add the remaining 850ml of hot stock and the bouquet garni

Simmer for 15-20 minutes then remove the boquet garni and puree the soup in a blender

Tip the soup back in the pan, season and add some chopped fresh basil

When ready to serve, re-heat and serve with a swirl of fat free natural yogurt and a sprig of fresh basil.

Like I say, super easy to make, healthy and tasty. We made some today, Molly asked for seconds and I was quite happy to give her some! There’s usually loads left over as well and it keeps really well so you can just keep re-heating it as and when required. Enjoy!
